Ingredients:
- Baby greens leaves
- Shallots
- Feta Cheese
- Marinated red peppers
- Black olives
- Roasted sweet potato
- Roasted cauliflower
- The Pumpkin house`s Raw Pumpkin Seeds
- The Pumpkin house`s Pumpkin Seed Oil
- Balsamic vinegar
- Salt & pepper to taste
- Sauerkraut
Preparation:
This simple salad is best made on a platter to show off all the wonderful colours. Simply spread a layer of baby greens, followed by finely chopped shallots, marinated red pepper pieces, pumpkin seeds, crumbled feta, a scattering of Sauerkraut and chopped black olives.
Sprinkle the whole salad with some pumpkin seed oil, balsamic vinegar and a pinch of salt and pepper to taste.
