Ingredients:
- 1 Kg Pumpkin diced
- 1 Onion
- 1tbs butter
- 1 Tsp Nutmeg
- zest 1/2 Orange
- Salt & Pepper to taste
- Cream
- Pumpkin Seed Oil
- Chives
Preparation:
Gently cook onion in butter for 5 minutes. Add diced pumpkin and water to cover. Cover pot and simmer for 30-45 minutes. Blend soup in the pot with hand-held food processor until smooth, then add nutmeg, orange zest, salt and pepper to taste. Serve hot in a bowl with a dollop of cream, drizzle of pumpkin seed oil and a sprinkle of chives. It will look gorgeous – a great winter warmer!
